We were having spinach artichoke dip, lemon spaghetti with grilled italian chicken and Nutella cheesecakes. I gave each M a recipe, the tools and ingredients they would need. Sounds easy right? Well 3 bottles of wine and one M drunker then the other 2, can make for some much needed cooking entertainment.
I'm telling you this because I'm only going to be sharing the cheesecake recipe with you, since I didn’t get pictures of the delicious spaghetti and the “unique” dip. I'll be making them at another time.
I will say everything turned out yummy!
Ingredients:
Box of Oreo crumbs (or 15 crushed Oreo cookies) 3T melted unsalted butter
2/3 cup Nutella
1- 8 oz package of softened light cream cheese
1 t mexico vanilla (or pure vanilla extract)
Optional: nuts, chocolate sprinkles or shavings
Whipping cream:
1 pint whipping cream (reserve a tablespoon per dish)
2 t vanilla 1-2 T sugar
Whip Cream:
Pour the pint of whipping cream into a medium bowl and beat until it holds soft peaks. If you are using an electric mixer, start out on medium speed to prevent any splattering, and then you’ll want to turn the speed up. If you want a workout, use a whisk and go hard and fast until peaks form.
Once soft peaks start to form, add sugar – Stir a few times and then add vanilla – Beat again, until fluffy peaks form.
Cheesecake:
Using a medium bowl, stir the Oreo crumbs& melted butter together - Equally divide the crumbs between your individual serving bowls & push into the bottoms of the dishes to form a crust – In a large bowl, beat the cream cheese & Nutella until silky smooth- Add vanilla & mix them to combine flavors- Fold in the already made whip cream until they
*Notes- Serves 4 to 6 depending on size of servings. We made 5 this night - One cup of whipping cream makes about 2 cups of whipped cream.
