Hey Hey I'm a Monkee

When I heard the news today about Davy Jones passing I was so sad. I remember growing up and watching the Monkees on TV with my nephew. We always did the "Monkee walk" into rooms and sang their songs.

Of course Davy was my fave! I think it was because he was short like me. I even learned to play the tambourine because of him. You might think I'm kidding, but I'm not. I play a mean tambourine. So if your band needs one, call me up and we can do a little jam session.

Also I loved, LOVED when he was on the Brady Bunch show and sang Girl.  (Insert dreamy eyes here)

I should mention the the hubs corrected me and said I grew up watching the "re-runs" of these TV shows. Which until he pointed that out, I never thought about it. So course now I started thinking about it. I guess that's why I was "that girl" in school. I was wearing the fads of my fave shows. I was a child of the 80's dressing like I was in the 60's & 70's. Oh well. At least I dressed like Marcia Brady and not Jan and that makes me feel a little better.

I'm going to go listen to my Monkees Greatest Hits now.

Habanero grilled cheese

I make one of the best grilled cheeses......you can ask anyone who's had one. They are delicious!

The secret is the cheese and that cheese is GOUDA!

Ingredients:

- Shredded smoked gouda (brown paraffin wax wrapper)
- Shredded Edam gouda (red paraffin wax wrapper)
- Habanero olive oil
- Bread

For the local Utah followers, I get all my yumminess from Harmon's. Sometimes the cheese monger will shred the smoked gouda, however because both are such a soft cheese it easily clogs their machine. Have no fear, you can shred it at home.

For the bread, get the country french or the french baguette artisan bread and select the cut it size 21'. The bread in the images is the french baguette.

Ok, lets start cooking.

After shredding your cheese - Oil your bread on both sides (this replaces the butter) - Place oil side of the bread face down on pan - Add the cheese, one layer at a time - Put on top piece on bread and cook on a low medium heat - I flip them a total of 4 times.


*Note- Because the bread is thick, cook the sandwich on low heat. This is the reason for turning the bread more then twice. I promise it's so worth it!














Hubs out of town = sad me

I dropped E off at the airport bright and early this morning. He's headed to Minneapolis for a business trip. It's only for a week, but it seems so long and I hate being without him.  :(

Last night when he brought up the suitcase, the cats started flipping out. Anytime they see the cases, they know we are going somewhere. They will claw at the suitcase, sit in it, sit on it and roll all over it.

Here are a couple of pictures of our princess Weezie leaving her hair all over the suitcase. She would also pull back the lid and sit in the bag on top of his clothes. Naughty kitty!


J&D Lushie

One of my fave things growing up were slushies. I then began thinking of how to combine my favorite drink growing up with a drink I occasionally like to drink now.

Introducing the "Lushie" (patent pending)

Things you'll need:

12oz Coke in a plastic bottle
1 shot of Jack Daniels

Ready, set, go.

You'll want to freeze your soda. I put my mine in the freezer for 30-45 minutes. Once you remove it from the freeze, push on the bottle and try to get the ice to move around. Run under a hot tap for 1 minute and keep turning the bottle. Then let stand for 5 minutes.

When removing the lid, do it slowly AND over a sink. Keep the bottle tilted downward or at an angle. There will be spillage, depending on how you hold the bottle will be the deciding factor on the mess you'll make. Mine just shot out a little and into the sink. The key is removing the lid slowly. You'll get the feel for it.

Fill up your cup with the slushie Coke and then pour 1 shot of the JD over it. Insert straw and enjoy.

My other flavored Lushie's are:

Hawaiian Punch with Malibu rum
Sprite with Dragonfruit rum & 1T grenadine poured on the top
Cherry 7-Up with Cherry rum
Cherry Coke with Amaretto
Root beer with Vanilla vodka
Orange Fanta (or OJ) with Pinnacle Whip Cream vodka

Great for summer months or in the winter. Which is when I crave cold drinks. I'm a total oddball!

Of course.....If you are super lazy, you can go get a slushie at 7/11.

No-bake Cheesecake w/ Nutella = HEAVEN!

Last Monday I had the Wicked M's over for girl’s night. We stayed in and cooked dinner. I went thru a few of my recipes the night before and picked out the ones we would be cooking. After trying to read my own writing I decided to type them out on the computer and print them out.

We were having spinach artichoke dip, lemon spaghetti with grilled italian chicken and Nutella cheesecakes. I gave each M a recipe, the tools and ingredients they would need. Sounds easy right? Well 3 bottles of wine and one M drunker then the other 2, can make for some much needed cooking entertainment.

I'm telling you this because I'm only going to be sharing the cheesecake recipe with you, since I didn’t get pictures of the delicious spaghetti and the “unique” dip. I'll be making them at another time.
 
I will say everything turned out yummy!
 
Ingredients:
Box of Oreo crumbs (or 15 crushed Oreo cookies)
3T melted unsalted butter
 
2/3 cup Nutella
1- 8 oz package of softened light cream cheese
1 t mexico vanilla (or pure vanilla extract)

Optional: nuts, chocolate sprinkles or shavings
 

Whipping cream:
1 pint whipping cream (reserve a tablespoon per dish)
2 t vanilla
1-2 T sugar
 
Whip Cream:
 
Pour the pint of whipping cream into a medium bowl and beat until it holds soft peaks. If you are using an electric mixer, start out on medium speed to prevent any splattering, and then you’ll want to turn the speed up. If you want a workout, use a whisk and go hard and fast until peaks form.
 
Once soft peaks start to form, add sugar – Stir a few times and then add vanilla – Beat again, until fluffy peaks form.

Cheesecake:

Using a medium bowl, stir the Oreo crumbs& melted butter together - Equally divide the crumbs between your individual serving bowls & push into the bottoms of the dishes to form a crust – In a large bowl, beat the cream cheese & Nutella until silky smooth- Add vanilla & mix them to combine flavors- Fold in the already made whip cream until they
 
*Notes- Serves 4 to 6 depending on size of servings. We made 5 this night - One cup of whipping cream makes about 2 cups of whipped cream.

















Easy clean up

The hubs was teaching the Wee P to drill. We used Post-It's for an easy clean up. I'm proud to say that the drilling went well and everything got hung up and more importantly they went up evenly.










The Motini

This drink has more of a tart taste, but you can make it a wee bit sweeter if you add in some Splenda.

Ingredients:

1 oz vodka
2 oz bourbon
5 oz grape juice
Lemon or lemon juice
Ice
Sugar (optional)

In a shaker add the ice and pour in all ingredients -1 tsp lemon juice - Add 1 T of sugar and shake it up - Pour into martini glasses and garnish with a lemon wedge. Last time we made these, I blended them for more of a daiquiri look.




Cholocate, drinks and the best 80's movie ever!

As we were just chilling at the house we decide to make some chocolate mustaches and lips. I forgot what perfectionist these guys were....however the Asian is just a wee bit more OCD then Itty.

We had only a minor issue when Itty thought the orange dye was red. Oh well, he now had some “fry sauce” colored lips as the hubs called it. After a few insults and some more drinks the chocolates were done and it was picture time!
Afterwards we watched The Night of the Comet. It was my favorite movie growing up and my first zombie movie I ever watched.

It's her party & she will fight if she wants to..

Nancyroo was having an open house and since she is a founding member of the girl's only Fight Club, it's a party I couldn't miss! Besides, I would be too afraid of the ass beating I would get later on if I didn't go. (She's crazy strong!)


So with the hubs, Itty, Asian and Adams in tow we made our journey out west. It was a quick road trip, but E almost turned the car around a couple of times because of the bad behavior from the people in the back seat. Ok, not really...but the threat was actually made.


Per the GPS we had arrived at our destination. We met up with Nancy, met her husband and got a house tour. Our first stop was a guest bedroom and guess what I found..... A CAT!! So of course this would be my favorite room. She was so pretty, so soft and liked to be carried around. Also the other rooms were nice to.  ;)


We hung out by the food, because that's always the best place to be. Also that's were the other Fight club member was hanging at. The "seemly" innocent De Souza. We had some yummy potato leek soup and I munched on the bread.  I brought boysenberry and cherry coke jello shots and they were a huge hit. YAY ME!!


Nancy then gave us a tour of outside and we meet her 3 horses. I miss having my horses, but the hubby did say if one was to wander into our yard I could keep it. After getting to feed the horse's carrots, we took some pictures with them. These 3 have the funniest personalities and one even scared Adams a little bit. In my pic, it was just the one horse and then the other one just jumped in and head checked me. It might have scared me just a second.


Sadly we weren't there to long. Adams had stitches in her eye taken out the day prior and it was getting all watery and red. So after some quick fights with ladies we headed home.


Thanks for the fun time Nancyroo! We had a blast and your home is lovely. And I love your cat, dog and horses. :)

Here fishy, fishy, fishy....

My new Jello shots are easy to make and so yummy!


Ingredients:


- Blue raspberry & orange Jello
- 2 cups water
- 1 cup vodka (unflavored) 
- 1 cup coconut rum
- 2oz cups
- Fish silicon molds


Let's start making these badboys.


The first thing you wanna do is prep the fish molds with the Pam spray - Boil the water, turn off the heat and keep the pan on the burner - Add in the orange jello and mix well - Add in rum and pour into fish molds - Put in fridge.


Now for the "water" - Boil water, turn off heat and leave on the burner - Add the blue jello and stir well - Add the vodka -  Pour into cups and put into the fridge to let chill.


Once chilled, remove the the cups first and for a water effect, mix the jello with a fork - Remove the fish from the tray and add them in. Get creative with it!  I cut a couple in half to give an under water look.


*Note- the blue raspberry, orange and coconut rum blend really well together and make for a yummy shot. I would highly suggest you stick with the unflavored vodka.
