Spinach artichoke dip

Today Manda Mayhem and I were suppose to have a dip-off, however when I warmed mine up in the break room my friends were in there and lets just say the dip disappeared within 10 minutes. Sadly that means I didn't get into the dip-off but I think it would've been a tie anyways. Although I didn't try it, it smelled really good.

So for the people who asked for the recipe, I'm glad you enjoyed it and here it is-

Ingredients:
- 13.75oz artichoke hearts- drained (I use the italian marinated kind)
- 10oz frozen spinach, thawed & squeezed
- 1/4 cup shallots - chopped
- 1-2 cloves garlic
- 6oz greek yogurt
- 1/2 cup mayonnaise
- 2/3 cup parmigiano reggiano
- 8oz shredded mozzarella cheese
- Salt & pepper to taste
- Olive oil spray


Ok, let’s start:

Preheat your oven to 375 - In a food processor, coarsely chop the artichoke hearts, garlic & shallots - Then combine all the ingredients in a medium bowl - Place in an oven safe dish sprayed with olive oil spray & bake for 20-25 minutes - Eat & enjoy. I love to use pretzels with this dip.
