The best damn chicken

Tonight the hubs cooked me my favorite thing....."fried" chicken, but instead of fried its BAKED!

SAY WHAT?!

Anyways for more of a fried chicken vibe, I would suggest using thighs & drumsticks. However because I hate bones in my meat, he uses chicken breasts.

This recipe makes the chicken super moist & the cayenne gives it a little kick .

Ingredients:
4 chicken breasts (or 6 drumsticks or 3-4 thighs)
2 1/2 cups bran flakes (crushed)
2 t kosher salt
1/2 t pepper
1/2 t paprika
1/2 t garlic powder
1/2 t cayenne pepper
1 t dijon mustard
5 T light mayonnaise
Pam spray (I use the olive oil kind)


Ok here we go:

Preheat oven to 400 - Line foil on a cookie sheet & set a rack on it - Spray rack with Pam spray – Mix mayonnaise & mustard together & set aside - In a bowl mix cereal, salt, paprika, garlic powder, pepper & cayenne pepper - Using a marinade brush, brush the mayo mustard mix onto the chicken - Then coat the chicken with the cereal mixture - Place chicken on wire rack & spray lightly with the Pam spray.

Cook for 35-40 minutes. I do 37 minutes & it’s just perfect.

*NOTES- Table salt is fine (2 or 3 teaspoons), but seriously 2 is just fine. You can crush the cereal in a chopper or in a food processor. I just did it in a large bowl and used a pestle to crush mine.
