Bacon chocolate chunk cookies

Yesterday I was cleaning out my recipe box I came across this cookie recipe and thought we should try making it. I don’t remember who gave me this recipe or how I came across it. It was just on a plain piece of paper, so sorry I can’t give a shout out to anyone.

It’s surprisingly really good! It has a rich chocolate taste with hints of salt and maple from the bacon. The bacon kind of hides in the cookie, so you could give it to someone before they knew it had bacon in it. Unless they are Jewish, don’t give this Jewish people…unless they are like me and eat bacon. DON’T JUDGE ME!

Super easy instructions. In fact other then cooking the bacon, I had the Wee P make them. He’s 11….so seriously, anyone could make these.

Ingredients:
7 slices cooked crumbled bacon
1 1/2 cups sugar
2 room temperature eggs
1 cup softened unsalted butter
2 t pure vanilla extract
2 cups leveled all-purpose flour
2/3 cup cocoa powder
1/4 t salt
3/4 t baking soda
2 cups semi-sweet chocolate chunks

Let’s bake some cookies!

Preheat your oven to 350 degrees -Beat sugar, eggs, butter & vanilla extract with an electric mixer until smooth - Stir in flour, cocoa, baking soda, & salt. Fold in the chocolate chunks & bacon – Using a cookie scoop drop cookies by rounded spoonfuls onto your ungreased cookie sheets - Bake 10 to 12 minutes –After 3 minutes transfer to a wire rack.

*Notes- I used maple flavored thick cut bacon. Using tin foil on your cookie sheets makes for a quick clean up. Cook bacon ahead of time. I always cook my bacon in an oven and here’s how to do it:
Preheat oven to 400 – line a cookie sheet with foil and cooking rack on sheet – Lay out the bacon on the rack – Put in oven and cook for 18 minutes. All the oil will drip onto the sheet and your bacon won’t be greasy and cooked just right.

Because ovens vary, start to check on your bacon after 15 minutes. If you want crispier bacon, remove cooked bacon from rack put on a microwaveable plate and cook in 20 seconds increments, till your desired crispiness.
