Ingredients-
- 2 3/4 cups flour
- 2 sticks unsalted butter (1 cup)
- 1 t salt, leveled- 2 sticks unsalted butter (1 cup)
- 1/2 t baking soda
- 3/4 cup white sugar
- 1/2 cup packed brown sugar
- 1 1/2 t mexican vanilla (or pure extract)
- 2 hard boiled eggs, diced finely
- 2 cups semi-sweet chocolate chip
Are you ready to make some f’in delicious cookies? Then let’s start by preheating your oven to 350 degrees.
In your food processor combine the flour, butter & process until the mixture is small crumbs – Add the salt & baking soda then process till combined – Add the white & brown sugar, along with the vanilla & eggs – Pulse until the mixture comes together – Remove from the processor and place dough into a glass bowl – Add chocolate chips and use hands to mix in the chips in– Roll dough into golf size balls & place on a greased cookie sheet – Flatten out the dough slightly with your palm – Bake for 13-15 minutes, remove from oven and let sit for 3 minutes before transferring to a cookie rack. Warm cookies pair nicely were a merlot.
I just left the cookies sitting out. When the hubs got home he had one and said it was the best and moist chocolate chip cookie he has ever had. I told him it had boiled egg in it and he was shocked and then had another one.
Now I would suggest cooking your eggs in the oven. I learned this trick from Alton Browns food network show years ago. This makes the egg fluffy, creamier and does not have a rubber texture. I won’t boil another egg after doing an egg this way.
How to boil oven cook eggs:
Preheat oven to 325 – Place eggs on middle rack – On bottom rack place a cookie sheet, this is a just in case an egg breaks, but I’ve never had that issue – Bake for 30 minutes – When you remove from the oven, place immediately into an ice bath – (ice bath is a bowl full of water and ice) – let sit 10 minutes and then crack and peel. Doing the ice bath makes it easy to peel. *Notes- You can add nuts or toffee to this recipe. Also you can replace you raw eggs to any cookie recipe and use oven eggs instead. Also if you want a warm cookie, place a couple cookies in the microwave under a sprinkled with water paper towel for 20 seconds.
If you are still having a hard time grasping the idea of using boiled eggs, apparently this is the technique they use in Europe all the time.
