I was watching The Chew a few weeks ago and saw them do a microwave carrot cake in a mug. Well the hubs loves carrot cake, so I thought I would test it out. The first go wasn't all that good, so I added a few things and here's my variation:
Ingrediants:
- 6 T pastry flour (read notes below)
- 3 T brown sugar
- 1/4 t baking soda
- 1/8 t cinnamon
- 1/8 t nutmeg
- 1/2 t mexican vanilla
- Pinch of sugar
- 2 oz buttermilk
- 1 egg -separated into white & yolk
- 1 grated medium to large carrot
- 2 tablespoons olive oil
- 2 tablespoons golden raisins
- 2 T chopped toasted pecans
- Zest of 1 small to medium orange
- Whip cream for garnish
Ok, let's start!
In a small bowl whip egg whites until soft & fluffy, then set aside - In another mixing bowl, mix egg yolk, pastry flour, shredded carrot, brown sugar, baking soda, olive oil, buttermilk, toasted pecans, raisins, nutmeg, vanilla, sugar, cinnamon, orange zest & egg whites. Combine until all ingredients are mix together.
Divide the mix between two mugs & microwave on high for 2 to 2 1/2 minutes. Garnish with whip cream cream & sprinkle with cinnamon.
Mix it up by using normal raisins or craisins.
*NOTES: If you don't have pastry flour, OR if your local store doesn't carry it you can make it yourself. You can make two cups pastry flour by combining 1 1/3 cups all-purpose flour with 2/3 cup cake flour.
