I love this dip. The hubs, not so much. He says its to garlicky....which its not. Oh well, more for me!
Ingredients:
- 1 can black beans ( I was lazy & didn't make my own)
- 1/4 cup chopped onion
- 2 cloves garlic (can do 1)
- 1/4 heaping cup roasted red peppers
- 1/4 cup veggie broth
- 2 T balsamic vinegar
- Pinch of cayenne pepper
-1/2 cup cheese (I use cojita & cheddar)
In a blender add the ingredients in order - If you have the magic bullet, this is the way to go - Just pulse it for a couple seconds. You can make the dip smooth or chunky, it's your choice.
*NOTES- You can serve this hot or cold. I usually serve it hot and then top off with some more cojita. Yum-yum.
