10 days straight....

It was a good idea when I thought of it and now I'm thinking not so much.

Utah Pride is coming up the weekend of June 2 & 3rd. Well I'm part of the actual Salt Lake Pride organization and one of the Lieutenants for my company's booth. Well because I work the weekends, I didn't really want to use my vacation time, so because I was also working at our company booth I was able to work Monday & Tuesday and get the weekend off. THAT MEANS....... I working 10 days straight. (yay and boo)

I actually get Monday the 4th off but go back to work on Tuesday instead of having that off because that weekend I'm volunteering at the Special Olympics. What can I say. Summertime is my busy vacation and volunteering months.

With all this volunteering and doing stuff doing the weekday, Adams and I decided we needed to do a girls trip before our new schedules started in July. We decided on Palisades, CO. Everyone has heard me talking about it the last week and wanted to check it out. Its only 4 1/2 hours and we can leave after work on Sunday and get there about 6pm. The bars are open late down there so that gives us plenty of time to relax and get our drink on.

So watch out Colorado! It was crazy when I was down their with 4 boys, but I'll be trouble when I'm with my girl.

Grand Junction trip

This past weekend we went on a mini vacay. I went with my hubs, Itty, Jesus & Bird. It was great weather and an amazing trip!

We tried many breweries, distilleries and wineries. My poor liver needs to take its own vacation now.

Everywhere we ate had delicious food. We were told that the Farmers Market starts up in June and that August is their peach festival. We are looking forward to going back. It's also such a close drive. Only 4 1/2 hours. Next time we are taking our cruisers down and just back to all the tasting rooms and distilleries.

Speak of distilleries; I had the smoothest vodka ever. It was like water. You could definitely get in trouble. Besides going back with the boys, I really want to plan a girl’s trip down there.

Great memories were made this last trip. We also met a super drunk guy called Jerry. He told us he was from Rhode Island and played professional rugby. Bird asked to see his ID and it turns out he was from AZ and as for rugby....he couldn’t even name his position.

The best part of the trip (besides the booze) were the ALPACAS!!!  OMG, I love them sooooo much!

Zombie babies

My friend at work drew on a My Little Pony and made it a zombie. Well I was inspired by her art and thought I would make a zombie of my own.

This might sound weird, but the process of making these was very therapeutic. I used basic paints and red food coloring. I used a lighter to burn their face (sounds sick and wrong, right?), but I wanted to add texture.

Green enchiladas are a go-go

Here's a yummy take on chicken enchiladas. Instead of a red sauce or white sauce I was thinking green......like salsa verde.

I added a chipotle pepper and some of the sauce to give it a kick.

Filling:
4 large chicken breasts – shredded
8oz light cream cheese
1T dried minced onion
1/2c half n half
8 - 10 flour tortillas
Optional- blend 1 chipotle pepper in adobe sauce (comes in small can)
& a teaspoon of the sauce


Sauce:
1 egg
salt & pepper
2 T fresh cilantro
1/4c chicken stock
1 c greek yogurt
1/2c heavy cream
1 small can chopped green chilies
12oz can tomatillo – drained

Topping:
1/4 c parmesan cheese
1/4 c cojito cheese
Sour cream
Fresh cilantro


Preheat your oven to 350 - Put all of your sauce ingredients into a blender & blend until combined - Set sauce mixture aside - In a medium bowl, combine shredded chicken, cream cheese, onion, pepper, sauce, half N half, yogurt & stir until combined - Fill tortillas with the chicken mixture & then roll up - Put into a 9x11 casserole pan - When you get all your tortillas filled, pour sauce over the top, sprinkle with parmesan cheese & bake for 15 to 20 minutes - Remove from oven and top with cojito cheese & cilantro. ENJOY!

Nutella Cupcakes

YEAH....these are f'in amazing!!  I made these for a birthday surprise for co-worker who has recently tried Nutella and now is love with it.

I used my basic sour cream chocolate cake and then made a Nutella buttercream frosting.

Ingredients:
¾ cup sour cream
4 eggs
½ cup water
½ cup oil
Box of devils food chocolate cake mix
1 small box instant chocolate pudding

BUTTERCREAM-
2 sticks of butter at room temp
3 cups powder sugar
1 cup Nutella


Lets get baking:

Preheat the oven to 350 - Beat the sour cream, eggs, water, & oil together in a large bowl until mixed - Add cake mix & pudding mix - Place batter in cupcake cups - Bake for 20 minutes -When the cupcakes are done, allow them to cool - Remove center part and fill with Nutella - Add the top of the removed piece of core cake on top of Nutella.

In a mixing bowl add in butter & one cup at a time of the powdered sugar - Once blended, add in the Nutella. I used 1 cup, but of course you can use more.

Frost cupcakes with either a knife technique or frosting bag & tip.
